A few weeks ago, my daughter came home for some immediate assistance. She had been married for almost a year and was having a bit of difficulty with her budget. She and her husband had significant debts and they had little money to spend on entertainment. She wanted to ask me for an inexpensive and fun suggestion for their upcoming wedding anniversary.

I told her that her father and I used to go on picnics to celebrate anniversaries and other special occasions. Through the years I have collected several picnic recipes that are economical and romantic. Since my daughter’s new home is near some lakes that are ideal for picnics and hiking, I thought that she should try my idea. My daughter excitedly agreed and asked me to share some picnic recipes with her so they could celebrate a wonderful anniversary.

She helped me find them in a cabinet I used for storing all my recipes. She was amazed by the number of recipe boxes, cookbooks, and folders that I had accumulated over the years. I found a folder that was marked outdoors. I told her that the picnic recipes would be included in there along with recipes for grilling as well as side dishes that I used to serve when we went on picnics.

The picnic recipes that are in that folder include my favorite smoked salmon rolls, a special cracker made with sesame seeds that I serve with smoked sausage, and grapes mixed with brown sugar and sour cream for dessert. My daughter took the picnic recipes and told me that she planned to take along a bottle of wine that they received on their wedding, to the picnic.

A day before the anniversary, I went with my daughter for some grocery shopping for the items necessary to complete the picnic recipes. As we were shopping, I began to realize that it has been along time since my husband and I had gone to a romantic picnic. I purchased several of our favorite foods and decided that I would surprise my husband with a picnic supper when he arrived from work.

The weather was perfect and we found a nice quiet spot in one of our favorite parks. We had a wonderful time relaxing and talking without the distraction that usually comes with being at home, or in a restaurant. We agreed after that picnic that we should go out and use our picnic recipes more often.
